The amount of added water in the dough should be adjusted according to the flour of different quality, and the amount of added water should be determined according to the wet gluten content of the flour. add water control in 35% ~ 40%, dough temperature is 28 ~ 30℃, using medium speed stirring.

② Aging. The purpose of aging is to eliminate the internal stress generated in the mixing process of the dough, so that the water molecules can penetrate into the interior of the protein colloidal particles to the maximum extent, and further form the network organization of gluten. The aging time is related to the aging effect. The longer the aging time is, the better the gluten network is formed. The aging time is generally 10-15 minutes.
 
③ Press. Generally, composite press is adopted. The thickness of the first pressing dough sheet is usually not less than 4 to 5 mm, and the thickness of the final dough sheet is less than 1 mm. Make the dough sheet firmer and smoother.

④ Cutting. Cutting is completed by a noodle cutter. Adjust the type and specifications of the required cutting knife. The basic specifications are 1.0mm, 1.5mm, 2.0mm, 3.0mm, 6.0mm, etc. Moreover, the commonly used cutters are square cutters and circular cutters.

⑤ Drying. Drying is a necessary step before packaging. This step is usually done by the drying machine, or it can be selected to be naturally dried, but natural drying may cause pollution and does not meet the hygiene requirements.
 
⑥ Packing. A composite packaging film is used. Low oxygen permeability, poor light transmission and strong sealing.
