Noodles is very popular in China, and there are different types of Chinese noodles, such as wheat flour noodles, rice noodles, La mian, vermicelli.
 
Wheat flour noodles originated in the north, where wheat is a staple crop. Depending on the ingredients used, the wheat flour noodles can be white or yellow, and the thickness can be adjusted according to personal preference. You can add egg, vegetable juice and other supplementary material to make noodles with different taste.
 
Rice noodles come in a range of shapes and sizes, both fresh and dried. They’re made from rice flour and water, with soft texture and mild flavour make them the perfect vehicle for just about any suite of flavours, whether bold or subtle. The rice noodles can be made into different shapes and thickness, the main production process is grinding, forming, steaming and cutting.

La mian also called “pulled noodles”, this kind of noodles are made by skilful twisting, stretching and folding of dough into strands, using the weight of the dough to form the noodles. The thickness of the noodles depends on how many times the dough is folded.
 
Vermicelli are also made from rice. The principal ingredients are rice flour and water. Sometimes add tapioca or corn starch in order to improve the transparency or increase the gelatinous and chewy texture of the noodles. It is extruded by a machine and the shape and thickness of the finished product are determined by the former.
